Founded in 1994 in Dallas, Texas, Cajun Turkey Company started the way most great things do: as a personal quest for perfection. Founder Billy Howell began to fry turkeys in his garage for family and friends, using tricks he’d garnered from as far back as his fraternity days and lessons he learned through trial and error. Once he had it down, he put an ad in the Dallas Morning News—and got more than 400 responses. Since then he’s become famous for a variety of readymade gourmet Cajun food, appearing on Food Network’s “Food Finds” and “Road-Tasted” with the Deen Brothers. But he’s most famous for his Cajun-style fried turkeys, which, as Dallas’ Examiner rightly proclaims, is “the best of the best.”

About The Food

There’s more to the perfect Louisiana deep-fried turkey than frying it, and Billy Howell knows exactly what that is. He injects his turkeys with a quart of “Geaux Juice (pronounced “go juice”), a proprietary blend of water, orange juice, and Cajun seasonings that results in an unparalleled flavorful juiciness in the finished bird. He then marinates each turkey overnight and deep-fries it in for 36 minutes in peanut oil to lock in moisture and flavor. Finished birds are seasoned lightly or spicy, then flash-frozen for freshness. Once they’re defrosted, they take just an hour to reheat and serve, making what has become widely known as the juiciest, tastiest fried-turkey in Texas, and a nearly effortless experience for any occasion. One bite of his famous turkey will make you a believer.

Meet The Owner

Billy Howell lives and cooks in Texas now, but he grew up in just outside New Orleans in Covington, Louisiana. Though his career was in wholesale apparel sales for nearly two decades, somewhere along the way, he became obsessed with Cajun cooking and perfecting the Cajun-style deep-fried turkey, which led to his delicious career about-face and resounding success doing what he loves most—creating Cajun and Creole dishes for restaurants, national food catalogs, and deep-fried turkey lovers around the country.
