Introduction

With the goal of making the tender, buttery, made-by-hand biscuits of her mother available for everyone, Carrie Bailey-Morey founded Callie’s Charleston Biscuits in 2005. Biscuits are the bread of The South, and these are ones advocated by Food & Wine, Saveur, The New York Times, Southern Living, and Oprah among others. Winner of at least 15 Sofi Awards (we’ve lost count), Carrie and her small team of bakers are keeping the tradition of Southern biscuit making alive.

About The Food

Every batch of biscuits starts with butter, flour, and a pair of experienced hands. This biscuit dough is made by hand daily and is never refrigerated. The only machine involved in the entire preparation and baking process is the oven! Callie’s makes over two million biscuits every year, and they can’t wait to send a batch to you. If the last biscuits you had came out of a can, Callie’s is going to reset the bar for you on what makes a great biscuit. Made with double the butter of traditional recipes, these special biscuits come in irresistible flavors including cheese and chive, classic cinnamon, country ham, shortcake, and pimento cheese.

Callie’s Biscuits came about because Carrie Bailey-Morey’s mom, Callie, had always made incredible biscuits for her by hand throughout her whole life. In 2005, they went in business together and though Callie retired after a couple years, Carrie runs the show and now has three locations open! Carrie has appeared live on the NBC Today Show, The Martha Stewart Show, Fox & Friends, and QVC and has been twice profiled by The Food Network’s hit television show Unwrapped. A mom first to her 3 children, Carrie is always expanding the possibilities of biscuit recipes, adding new flavors and seasonal items every year. She also plays an active role in the community, acting as an incubator by offering baking space to entrepreneurs and helping them understand marketing and growth strategies.

Packaging & Delivery

All goods from Callie's Biscuits are packaged and shipped to assure they arrive in excellent condition within the max allowable transit time of 2 days.

All orders are shipped signature release. This means FedEx will leave the package at the doorstep, front desk or gate associated with the shipping address without requiring a signature upon delivery. It is the customer's responsibility to ensure that the contents of the package are stored in a freezer or refrigerator promptly after delivery. FoodyDirect cannot be responsible for orders with incomplete or invalid addresses, or that are sent to recipients who are not available to store the contents of the order on the day of arrival. FedEx cannot deliver to a P.O. box.

Storage & Care
  • How long can the biscuits be refrigerated? If you are using them in the next day or so they are fine to stay refrigerated until use.
  • How long can the biscuits be frozen? 18 months! As long as they are sealed either in Callie's vacuum bag or your own Ziploc bag
  • What if I don’t want to eat them all at once? Easy, just take them out of the vacuum seal bag, break apart and put them in your own Ziploc bag.

Heating Instructions: Preheat the oven to 400 degrees. Unwrap the biscuits and remove from plastic wrap. Wrap the biscuits in aluminum foil. If baking more than one vacuum sealed pack at a time, make sure to wrap in one layer. Bake in the oven for 25-30 minutes. Open the foil for the last 3-5 minutes of baking so that the biscuit tops become golden brown. Let the biscuits rest for a couple of minutes before enjoying. For Shortcakes: Preheat oven to 350 degrees and follow the directions above.
