Introduction

It’s not every day that legendary food editor/author Ruth Reichl declares that she wants barbecue as a gift. But Carolina Cue To-Go’s totally addicting, juicy, tender, and tangy pulled pork is simply that good. Borne in 2014 from accomplished grilling, barbecue and pastry chef Elizabeth Karmel’s favorite way to prepare her native pulled pork, Carolina Cue To-Go is the best that North Carolina has to offer. Karmel combines Eastern-style whole hog seasoned with her signature Western-style “Red “Vinegar Sauce. This newcomer to the Carolina ‘cue scene is an instant classic.

About The Food

While most pulled pork comes from the shoulder, Carolina Cue To-Go smokes whole hogs from small local North Carolina farms to create noticeably more tender and more flavorful barbecue. Rubbed simply with salt and pepper, it is smoked for 12 hours over indigenous hickory wood, hand-pulled and chopped while it’s still hot, and seasoned with Elizabeth Karmel’s signature house-made Lexington-style Vinegar Sauce (a perfect balance of sugar, pepper, and tang thanks to pure apple cider vinegar). Whole-hog barbecue just doesn’t taste any better than this. And owner Elizabeth Karmel won’t charge a premium for her ultra-rich ‘cue, because she wants Carolina Cue To-Go to be your everyday “go-to” for home entertaining and gifts. The pulled pork sandwich kits (with all the fixin’s) you’ll find here are not only as good as it gets—the prices are unbeatable too.

Meet The Owner

Elizabeth Karmel was already a well-known chef, cookbook author, barbecue, grilling and Southern foods expert, and syndicated columnist of Associated Press’s The American Table when she built her Online Barbecue Shack, Carolina Cue To-Go. In fact, she left Hill Country Barbecue and Hill Country Chicken in New York City, Brooklyn and Washington, DC—where as the founding executive chef, she created the award-winning menus for the meats, the sides and the desserts—to focus full time on the barbecue from her native state. When she teamed up to host a series of weekend dinners with friend, fellow food-loving North Carolinian, and respected Wall Street banker David Lineweaver, something clicked. A perfect combination of skills—plus Elizabeth’s unique combination of eastern-style “Whole Hog” and western-style red vinegar sauce—resulted in Carolina Cue’s modern, one-of-a-kind “Best in Class” barbecue experience.

$ 9.95 Flat-Rate Shipping - If your shipping address is reachable from Carolina Cue To-Go via UPS Ground service within two days, you will be presented with the incredibly low shipping rate of $ 9.95 upon checkout.
$ 39.95 Flat-Rate Shipping - If your shipping address is beyond 2-day ground reach, you will be presented with a flat rate of $ 39.95 for UPS 2nd Day Air upon checkout.


*Please note that the flat rates above will be applied per shipping box. While some packages can be combined into a single box, several packages from Carolina Cue To-Go require their own shipping box. You will be presented with the actual shipping rate before making your purchase.

Orders are shipped Monday through Thurssday, except holidays. Orders placed by 12 Noon (ET) can be shipped that day. The max allowable transit time for all items is 2 days. Perishable items cannot be shipped over a weekend and cannot be delivered on Sunday or Monday.


Weather and unforeseen circumstances can delay your shipment. We strongly recommend that you schedule your order to arrive at least 1 business day before your desired usage date to allow for any delays.


Shipping Options

The following shipping options are available depending upon the delivery date selected and reflect the max allowable transit time of two days:


Ground Shipping (1-2 Days) - If a customer’s shipping address is reachable via UPS Ground service within 2 days, they will be presented with a $9.95 Flat-Rate Shipping upon checkout. Orders will be delivered via UPS Ground service on or before the selected arrival date, between 9:00 AM and 8:00 PM to residences, and between 9:00 AM and 5:00 PM to businesses.


2nd-Day Air - If the shipping address is not reachable within 2 days via UPS Ground service, the customer will be presented with $39.95 Flat-Rate Shipping upon checkout. The order will be shipped via UPS 2nd-Day Air and will be delivered on or before the end of the second business day following shipment (unless upgrading to Saturday delivery). Delivery time can vary based on area, but can be as late as 8:00 p.m. to residences and 5:00 p.m. to businesses.


UPS Next Day Air Saver - Your package will be delivered by the end of the next business day after it has been shipped. Delivery time can vary based on area, but can be as late as 8:00 p.m. to residences and 5:00 p.m. to businesses. The flat-rate for Next Day Air Saver is $49.95.


UPS Next Day Air - Your package will be delivered the next morning after it has shipped (or Saturday if upgrading to Saturday delivery), by 12 noon to most addresses. The flat-rate for UPS Next Day Air is $54.95.


Saturday Delivery - Saturday delivery is available for UPS 2-Day for an additional charge of $20 per package (for a total of $59.95). Deliveries are made between 9:00 AM and 8:00 PM, depending upon delivery address. Saturday delivery is not available for UPS Ground shipments.


Once your order has shipped, you will receive a ship notification email with a tracking number for each package in your order. When your order has been delivered, you will also receive a delivery notification email.

Packaging & Delivery

All treats from Carolina Cue To-Go are professionally packed and shipped to assure they arrive in excellent condition within the max allowable transit time of 2 days.

All orders are shipped signature release. This means UPS will leave the package at the doorstep, front desk or gate associated with the shipping address without requiring a signature upon delivery. It is the customer's responsibility to ensure that the contents of the package are stored in a freezer or refrigerator promptly after delivery. FoodyDirect cannot be responsible for orders with incomplete or invalid addresses, or that are sent to recipients who are not available to store the contents of the order on the day of arrival. UPS cannot deliver to a P.O. box.

Prep & Care

1) Allow pork barbecue to thaw in the refrigerator overnight (about 12-14 hours). Or to prepare from frozen, follow the instructions and add about 15 minutes to the re-heat time.


2) Remove from plastic container and place in an oven-safe dish with a lid, or a casserole dish that you can cover with foil. *Adding extra sauce is not necessary. However, heating covered is necessary to keep cue moist.


3) Cook in a 300-degree pre-heated oven for 30-40 minutes until heated through and steaming.


4) To reheat on the grill: Place cue in a covered aluminum pan or other grill-safe container and reheat over medium-low heat (300-325) for 30-40 minutes or until the cue is hot and steaming. Enjoy!


Note: The more barbecue you re-heat, the longer it will take. We do not recommend microwaving slow-cooked cue.


Carolina Cole Slaw (cabbage not included): Place chopped cabbage into a non-reactive bowl. Add enough Caroline Cue Sauce to wet the chopped cabbage (about ½-cup to 1 cup of sauce per pound of chopped cabbage, as needed). Let sit for at least 30 minutes or overnight covered in the refrigerator. Stir before serving. Reserve extra sauce for adding to pork. Slaw will keep for up to 3 days, covered in the refrigerator.
