Swordfish has a mildly sweet flavor and a moist, meaty texture with moderately high fat content. The flesh can range from white or ivory to pink or orange (the color variations do not reflect quality). All Swordfish turn beige in color after cooking. Because Swordfish meat is relatively firm, it can be cooked in ways more fragile types of fish cannot (such as over a grill on skewers).

The cut was perfect because it is usually thick and these filets were about 3/4-1 inch thick. Flavor and extremely mosit.
