Flannery's Prime short ribs are cut English style so the each section will be about 1.5” thick and 8” long and will have 3 separate ribs. This method of cutting will afford a more uniform presentation and portion when serving.

Bryan produces his bone-in short ribs from the chuck and not the prime rib—an important distinction because the meat from the chuck short-rib is thicker and more tender than from the prime rib.

The short ribs had good flavor. I would have preferred them a little leaner. I cooked them in the slow cooker and they were great.

I received my beef ribs on a Wednesday cooked them on Sunday when I opened bag of meat they smelled and were a bit slimy. Once I rinsed them and cooked them with red wine Oh! my goodness the meat fell l off the bone and so tender plus they were such a great price! I will be ordering again, Shipment was fast, well packaged, Thank you

Storage & Care:

Steaks and Burgers from Flannery Beef can be kept refrigerated in their sealed packaging for 3 to 4 days after arrival. All the steaks, except the filets, are dry-aged and can be frozen in their sealed packaging for up to 6 months with no loss of quality, texture, or taste. Defrost frozen steaks overnight in the refrigerator


Bryan's Insider Tip: though this type of meat is not aged to any great extent, they are of such a high quality that they are capable of being slow cooked directly on a grill. The trick for this is to slightly back off the heat and turn the ribs over multiple times over the course of 15-20 minutes. Plan on 12 - 16 oz per serving.
