The signature dish of John Folse and Rick Tramonto’s Restaurant R’evolution in the heart of New Orleans’ French Quarter, “Death by Gumbo” is something to experience and behold…it’s truly a show stopper. Each serving features a whole quail, seasoned and stuffed with fresh gulf oysters, Andouille sausage and Filé rice (Filé is a spicy herb made from the dried, ground leaves of the sassafras tree).

This special meal can be enjoyed as two dinners-for-four, or one dinner for eight.

Storage & Care:

Death by gumbo is shipped fresh and is best enjoyed within 2 days of delivery. Store all ingredients in your refrigerator upon delivery, in their original packaging. If necessary, you can freeze the items for up to 14 days in its original packaging.

Preparation:

Preheat oven to 425°F. Place bags of gumbo in boiling water. Once water has returned to a boil, reduce heat to a simmer. Hold bags at a simmer for 20 minutes to heat thoroughly. Stirring to separate the bags during the heating process should be done with a smooth edged plastic or wooden spoon. Sharp objects and metal tongs may puncture bags. Always use extreme care when removing bags from boiling water to avoid burns. Place stuffed quail on lightly greased sheet pan and bake for 22-25 minutes, or until stuffing reaches temperature of 165°F and the juices run clear.
