Founded in 1957 as Smokestack BBQ, this family-owned Kansas City landmark was famous by the 1970s for its gourmet meats cooked over Ozark hickory wood and the country’s most extensive barbecue menu. Three generations later, it’s still the stuff of barbecue legend, celebrated by everyone from the Today Show to The New York Times and Bon Appétit for its mouthwatering Kansas City barbecue including BBQ ribs, brisket, iconic “Burnt Ends” (double-smoked meats with seared edges), and spectacular sides.

About The Food

Like all great barbecue, superiority starts with the meat. Jack Stack BBQ is celebrated for their incredible variety of mouthwatering baby back ribs, pork spare ribs, tender brisket, and juicy pulled pork and chicken, and their famous Burnt Ends (seared pieces of beef, pork or ham). Jack Stack’s pitmasters smoke the meat for up to 13 hours over Ozark hickory wood and season it with the tastiest sauces and rubs, yielding barbecue that is constantly ranked the best in the country by Zagat. Enjoyed with their exceptional sides, a Jack Stack BBQ meal is everything there is to love about great barbecue.

Meet The Owner

Founder Jack Fiorella was a barbecue man from the start. After his father, Russ Fiorella, founded a Kansas City traditional barbecue joint in 1957, Jack joined him, working alongside his father until 1974, when he set off to seek his own barbecue fortune with sister restaurant Fiorella’s Jack Stack of Martin City. In 1987, Jack’s son-in-law Case Dorman took the helm, and through his vision, leadership and integrity, built Jack Stack into the world-famous Kansas City BBQ mecca it is today.
