When he opened Lillie’s Q in 2010, Chef Charlie McKenna brought award-winning competition BBQ and timeless Southern cooking to the city of big shoulders. McKenna and Lillie’s Q have garnered critical praise and awards from both local Chicago and national media – including being named “Best New BBQ Restaurant in the Country” by Food & Wine magazine in 2011. McKenna has since expanded Lillie’s Q with outposts in the Chicago French Market and the United Center, a West Coast location in downtown Brea, California and a location he co-owns with his parents in Destin, Florida. After gaining recognition for the award-winning sauces he was serving in the restaurant, McKenna began bottling them and now Lillie’s Q Sauces & Rubs is a nationally and internationally recognized brand. And for the first time, Charlie is now shipping his slow-smoked BBQ Pork nationwide. Plan a trip to Lillie´s Q or experience the culmination of three generations of Southern style barbecue mastery at home. From Lillie´s kitchen to yours… enjoy.

About The Food

For the first time, legendary pit-master Charlie McKenna is shipping his "Memphis in May" World Championship BBQ pork butts straight to doorsteps nationwide for an incredible, authentic experience in your own kitchen. Exclusively using premium "Duroc" pork shoulder from Minnesota's Compart Family Farms, Lillie's Q seasons the pork butts with their signature rub, then slowly smokes them over peach wood until they're fully-cooked and ready to ship. Lillie's is equally famous for their authentic southern-style BBQ sauces. From Carolina Gold to Hot Smoky, each of the Lillie´s Q sauces pays homage to the deep-rooted barbeque traditions of specific Southern regions from South Carolina to Memphis. In addition to the classics (Smoky, Hot Smoky, Carolina, E.N.C., Ivory, Carolina Gold, Hot Mess and Hot Pepper Vinegar), every few months McKenna creates a limited edition bourbon-barrel aged sauce that takes BBQ to a whole new level. Each recipe was created exclusively by Chef Charlie and is made in-house.

Meet The Owner

Executive Chef Charlie McKenna learned the secrets of his grandmother Lillie´s special BBQ sauces as a boy in Greenville, South Carolina. Years later, he transformed these spectacular regional recipes and three generations of southern-style barbeque mastery into legendary BBQ success, garnering first place at Memphis-In-May World Championship and props from Oprah, InStyle, Cooking Light and Real Simple.

Charlie graduated from Florida State University and New York’s Culinary Institute of America before he began his cooking career under Florida’s legendary chef Norman Van Aken. He further honed his skills in sous chef positions at Chicago’s four-star Tru restaurant followed by Avenues in the Peninsula Hotel. Along the way, he competed in and won various awards on the competition BBQ circuit, including first place at world championship of BBQ Memphis in May.

Prep & Care

BBQ Meats
Store: If you plan to cook your pork butt within 3 days, store in your refrigerator. Otherwise, freeze upon arrival in its original packaging for up to 2 months. When you’re ready to use, defrost in your refrigerator 1 to 2 days before serving and follow the instructions below.

Prep: This product has been smoked and partially cooked to maintain the highest level of quality. To finish at home, keep pork in vacuum-sealed bag, and place in a 200º F oven for approximately 4 hours. When the internal temperature at the center reaches 170º F it’s ready. Remove from the oven and carefully cut the bag open with scissors, place in container to retain juices. Gently pull the pork apart with tongs and a fork, add sauce or enjoy on its own.

Refrigerate after opening and enjoy by the "use by" date on the bottle.
