Olli calls this salame “Toscano” because pollen from Florence fennel (”finocchio” in Italian), which imparts a slight licorice-like aromatic intensity and has been the pork enhancer of choice for generations, grows wild in the Tuscan hills and is closely associated with the regional cuisine.

Olli’s all-natural salame (the Italian spelling for “salami”) is made based on 160-year-old Italian family recipes passed down to founder Oliviero “Olli” Colmignoli. All salame is made right here in the U.S.A. in a state-of-the-art facility in Mechanicsville, Virginia.

Orders are shipped on Mondays and Wednesdays, except holidays. Orders placed any time Wednesday through Sunday (ET) can ship as early as Monday. Orders placed any time Monday or Tuesday (ET) can ship as early as Wednesday.

Storage & Care:

Olli salame is stamped with an expiration date on the outside of its shipping box. The salame ships with moisture resistant ice packs; we suggest keeping it cool until you are ready to enjoy. Store unused salami in a plastic bag in the refrigerator. Once sliced, the remainder can be placed in an air-tight bag or container in the fridge for about two weeks.
