Here’s your chance to build the ultimate Raffetto’s pasta feast. Just choose three kinds of Raffetto’s fresh pasta (custom-cut to the size you want), and three of their incredible homemade sauces. Not sure which sauce to pair with your preferred pasta? Andrew Raffetto has provided a cheat-sheet below with his suggested sauce & pasta pairings (but by all means create your own combinations!)

The Fresh Pasta & Sauce Combo Pack includes:

  • 3 two-pound packs of freshly-cut pasta
  • 3 containers of homemade sauce
  • Raffetto’s crispy, buttery Genoa Toast
  • Raffetto's signature Arborio rice pudding

Select your pasta and choose how you’d like it cut-

  • Linguine (1/8-inch)
  • Tagliatelle (1/4 inch)
  • Fettuccine (3/8 inch)
  • Wide Fettuccine (1/2 inch)
  • Pappardelle (1 inch)

Select 3 sauces from the following varieties (note - all sauces are 14-oz except the pestos which are 7-oz):

  • Marinara: classic red sauce seasoned with imported oregano and garlic
  • Tomato & Basil: classic red sauce with a touch of sweetness and fresh basil
  • Bolognese: a classic hearty meat and tomato sauce
  • Pink: like a creamy-tomato “vodka sauce” but made with cognac instead of vodka to give it more character
  • Arrabiata: slightly spicy with garlic, tomatoes, and red chili peppers
  • Puttanesca: tangy, mildly salty red sauce with Southern Italian flavor
  • Classic Pesto: Northern Italy’s staple sauce made of pine nuts, cheese, fresh basil, and olive oil
  • Mushroom Pesto: a special creation for mushroom lovers

Storage & Care:

<br> Pasta Refrigerate pasta immediately upon delivery. Any pasta not eaten within 2 days of delivery should be frozen. All of Raffetto’s pasta can be frozen up to 2 months, and if stored frozen should be cooked frozen. <br> Sauces All sauces last in the refrigerator for up to 2 weeks, and may be frozen for up to 2 months.

Preparation:

<br> Pasta The amount of salt in the water is very important. Raffetto’s does not put any salt in the dough; therefore it is critical to add salt to the water for maximum flavor. Add approximately 1½ tbsp. of salt per 10-qt pot, and cook for 3-4 minutes. After straining the pasta, Raffetto's suggests tossing your pasta in a small amount of olive oil to keep it from sticking. Avoid "shocking" the pasta with cold water as that will wash away some of the flavor. <br> Sauces Heat Sauces in a non-reactive saucepan over low to medium heat, stirring frequently, until simmering hot. Pesto should never be heated and can be placed on pasta either cold, or ideally at room temperature. A good rule of thumb is to remove pesto from your refrigerator when you fill the pot with water.
