4 Slabs + BBQ Sauce

It all started with the sauce. Combined in a washtub and mixed with a paddle for family barbecues in Southeast Missouri in the 1930s, Lute Roark’s tangy coating for slow-cooked whole hogs and sides of beef became so beloved, it ultimately launched a four-generation barbecue dynasty and a first-place win at Memphis in May BBQ World Championships. Lute's son Ubon passed the torch to his son Garry, who introduced their lovingly slow-smoked meats drenched in the legendary sauce to the competition-barbecue circuit. Today Garry and his daughter Leslie carry on the family tradition at Ubon’s Barbeque, the pride and joy of Yazoo City, Mississippi.

About The Food

This finger-licking Memphis-meets-Kansas City barbecue has won more than 200 impressive awards in the past 20 years, including “First Place Shoulder” at the Memphis in May BBQ World Championships, three Top-5 finishes at The Jack Daniels World Championship Invitational BBQ Contest, and First Place at the MBN Best Of The Best BBQ Cooking Competition. Hailing from the home of the Delta Blues, its ribs, pulled pork, chicken, brisket and smoked sausage have just as much soul and unique regional flavor as the region’s music. All meats are seasoned with a Memphis-style dry rub, slowly smoked with lump charcoal and hickory wood, and slathered with Ubon’s famous sweet and tangy sauce.

Meet The Owner

A true family business, Ubon’s is owned and operated by Ubon Roark’s son Garry Roark, Garry’s daughter Leslie Roark Scott (the first female to win a grand championship in the Memphis BBQ circuit!), and Leslie’s husband Heath Scott (when he’s not busy serving as the town doctor). Since bringing Ubon’s barbecue and sauce to the limelight, they have become Food Network darlings for their hospitality and barbecue skills. Garry Roark is one of the featured pitmasters at the Big Apple Barbecue Block Party, while Leslie, also known as Yazoo’s “BBQ Princess,” was a finalist on “Chopped Grill Masters” in August, 2015.
